I can remember the very first time I had a steak fajita. It was at a T.G.I.Friday’s way back in the 80’s. I vividly recall the steaming hot, sizzling plate making its way over to my table. Oh, how delightful those colorful mounds of peppers, guacamole, sour cream and salsa were. A make your own meal bursting with delightfully spicy, creamy, crunchy and savory flavors…YUM! While I have not dined at a TGIF’s in decades, I still have the occasional craving for this delightful treat. Check out my more healthful version below.

Ingredients
- 3 lbs Skirt Steak
- 1 tsp dried oregano
- 1 tsp chili powder
- 1/2 tsp cumin
- 4 garlic cloves minced
- 1 jalepeno seeded and chopped
- 1/4 cup olive oil
- 1/2 cup balsamic vinegar
- 1 tsp salt
- 1 tsp freshly ground pepper

Instructions
- Whisk together oregano, chili powder, cumin, garlic, jalapeno, oil and vinegar. Pour into large ziploc bag and add steak. Let marinate in refrigerator for at least 2 hours, flipping occasionally.
- Remove from refrigerator and set out at room temp for 30 minutes.
- Take steak out of marinade and pat dry with paper towels. Season with salt and pepper.
- Grill on high, 3-5 minutes per side. Let set to cool for 8 minutes before slicing against the grain.
- Serve over a salad of romaine, peppers and onions. Top with fresh guacamole, salsa and Greek yogurt. Enjoy!
