As soon as the weather turns late fall, one of my most favorite Sunday meals is beef chili. What a delightful cold weather meal, one that will surely please almost anyone (vegetarians aside)! Put it together in the morning before you head out and it will be ready in time for the big game. It can even be enjoyed with different toppings or wrapped in a warm tortilla. Get creative!

Ingredients
- 5 lbs grass-fed beef
- 5 garlic cloves minced
- 1 yellow onion chopped
- 1 can chopped tomatoes with juices 28 oz
- 7 Tbs. chili powder
- 2 tsp. dried oregano
- 1 tsp. ground cumin
- 2 cups beef bone broth
- Sea salt to taste
- Freshly ground pepper to taste

Instructions
- Over medium heat, brown the beef (in batches) in olive oil.
- Using a slotted spoon, transfer beef to slow cooker.
- Add the rest of ingredients to slow cooker and stir to blend.
- Cover and cook on high for 6 hours.
- Enjoy!

*Delicious garnishes: avocado, bacon, greek yogurt, red onion or cilantro.
*Add beef collagen as a healthy thickener if desired.
