Ginger Carrot Soup
  • 2Tbls olive oil
  • 2 Onions
  • 2Tbls Fresh Gingergrated
  • 2lbs Carrotspeeled and sliced
  • 6 cups Chicken Bone Broth or Vegetable Broth
  • freshly ground pepper
  • Pinch of freshly ground nutmeg
  • Sea Salt
  1. Heat olive oil in large sauce pan over medium heat. Add onion, cook until soft and fragrant, about 5 minutes.
  2. Add broth, carrots, and ginger. Bring to a boil, cover and reduce heat. Simmer until carrots are tender, about 45 minutes.
  3. Using an immersion blender, puree the soup until smooth.
  4. Add salt, pepper and nutmeg. Enjoy!
