Ginger Carrot Soup
peeled and sliced
Chicken Bone Broth or Vegetable Broth
freshly ground pepper
Pinch of freshly ground nutmeg
Heat olive oil in large sauce pan over medium heat. Add onion, cook until soft and fragrant, about 5 minutes.
Add broth, carrots, and ginger. Bring to a boil, cover and reduce heat. Simmer until carrots are tender, about 45 minutes.
Using an immersion blender, puree the soup until smooth.
Add salt, pepper and nutmeg. Enjoy!
