I always encourage people to drink bone broth regularly. Have it as a staple in your home for you, your family and friends. However, there is no reason to get bored with the same taste day in and day out in an effort to consume this healing elixir. This is why I love to use it in as many recipes as I can. Check out my delicious Ginger Carrot Soup, a taste everyone will surely love! For the vegetarians in your life, simply use vegetable broth instead….still a super healthy and delicious meal.

Ingredients
- 2 Tbls olive oil
- 2 Onions
- 2 Tbls Fresh Ginger grated
- 2 lbs Carrots peeled and sliced
- 6 cups Chicken Bone Broth or Vegetable Broth
- freshly ground pepper
- Pinch of freshly ground nutmeg
- Sea Salt

Instructions
- Heat olive oil in large sauce pan over medium heat. Add onion, cook until soft and fragrant, about 5 minutes.
- Add broth, carrots, and ginger. Bring to a boil, cover and reduce heat. Simmer until carrots are tender, about 45 minutes.
- Using an immersion blender, puree the soup until smooth.
- Add salt, pepper and nutmeg. Enjoy!
