Whenever possible, I like to dig into a healthy snack that seems like I am eating dessert. Berries are a healthy, sweet snack especially when macerated and topped with something creamy. Try out this “dessert” to see if it doesn’t take the edge off of wanting something more decadent.

- MACERATED BERRIES
- 18 ounces assorted organic berries
- 3 Tbsp. balsamic vinegar
- 12 drops Stevia
- COCONUT WHIPPED CREAM
- 3 cans good quality coconut milk
- 10 drops Stevia

Instructions
- Combine washed/dried berries in large bowl.
- Drizzle vinegar and stevia and stir to combine and let sit out for an hour.
- Berries will soften and start to release their juices.
- Place mixing bowl and whisk in freezer for 10 minutes.
- Open the cans and skim the cream from the tops, leaving the thin liquid behind.
- Place the cream and stevia in mixing bowl, whisk until thick with stiff peaks form.

*strawberries must be hulled and cut into smaller pieces
