Sadly, very few of us bounce out of bed in the morning well rested and enthusiastic to address all the challenges of the morning (let alone the entire day). I am often frustrated by the lack of time and cooperation when getting my four kids off to school, and I hate to have to sacrifice a healthy breakfast because of it. After all, a good breakfast sets the tone for the rest of the day. It turns our brains on and gives us energy to get going and to properly focus and the ability to be patient and kind! Try out this recipe that you can prep the night before, then just pop in the oven in the morning. You may even have leftovers for the next morning or a healthy after school snack!

- 2 eggs scrambled
- 2 large bell peppers diced
- 6 strips of bacon cooked and diced
- 1 cup cheddar cheese shredded
- Sea Salt and pepper to taste
Ingredients

- Preheat oven to 350F and butter or spray muffin olive oil
- Whisk all ingredients together in a large bowl
- Pour mixture into muffin tins
- Bake for 25 minutes (until eggs are just cooked through)
- Enjoy!
Add additional veggies or substitute bacon and peppers for whatever you and your family enjoys!
